On February 16, 2010, the Hesperia City Council passed Ordinance No. 2010-002 and Resolution No. 2010-003 initiating a Fats, Oils, and Grease (FOG) Program to remove or prevent FOG from entering the public sewer system. As a result, every business or facility in the City that prepares and/or serves any type of food item, and is on the City sewer system, is required to enroll in the FOG Program.
The goal of the FOG Program is to work with organizations to promote and encourage activities that will minimize the discharge of fats, oils, and grease into the public sewer system. To this end, the Program requires:
- A Discharge Permit
- Payment of required fees
- Compliance with Conditions of Operation
